60% Merlot - 20% Cabernet Franc - 20% Cabernet Sauvignon

Winemaking

Classic Bordeaux vinification. Alcoholic fermentation in stainless steel vats, with extraction of the color by reassembly then malolactic fermentation in stainless steel vats as well. Aged in oak barrels. We use wood for the complexity of the aromas. We marry the tannins contained in the berries with those of the wood to give roundness and amplitude to the wine.

Our opinion

We want this wine to give you the taste of a classic Bordeaux or the fruit is highlighted not elegant tannins and structured. The tannins are worked to give you a nice length in the mouth. This wine is ideal for convivial meals.

The balance between oak and fruit

In a few words, the Cuvée Prestige differs from the Cuvée Traditionnelle because of its aging method. We elaborate the wine in our stainless steel vats for better control during the alcoholic fermentation and during the "malo". The second stage of the vinification of the red wine when the malic acids are transformed into lactic acid. Once the wine is finished, we will fill the barrels. This consists of filling the barrels with the finish wine. when in barrel, the wine will stay there for 9 to 12 months depending on how it is impregnated with oaky notes. Regularly we check the level of the barrels because the angel's share. The natural evaporation that lower the level f wine in the barrel. It can alter the quality of the wine if it leaves too much room for oxygen.
Finally, after its aging period, the Cuvée Prestige is put in vats to reassemble all the barrels and facilitate the bottling.
